Veggies and Chocolate in an Instant Pot®

The Instant Pot®. Call me slow to warm up to the idea (pun intended), but I am finally on board. What’s not to love about a kitchen gadget that can create a full-fledged meal including veggies and chocolate in a matter of minutes?

What is an Instant Pot? In simple terms it is a multi-use, programmable pressure cooker.

I heard the buzz months ago but set the idea aside as it initially suggested one more item I would have to find a place to store.  That or it would take up precious real estate on the counter-top.

After further research, it turns out the Instant Pot® Company has been around longer than I had known.  Per the company website, it was founded in 2009 with the objective, “to find solutions that would enable busy families and professionals to prepare quality food in less time, promoting better eating and reducing the consumption of fast food.”

SERIOUSLY!? Genius! I’m not the only one who thinks so considering it’s the number one selling brand on Amazon.com with one of the highest overall customer ratings including “Game changer for food prep” and “An absolute godsend…”

Now I’ll admit, mine is still in the box but in my defense I’ve only been home for a few days and the Christmas tree is still standing. I’ve also been busy with some go-getter Veggies and Chocolate™ Clients who are ready to master a healthy lifestyle once and for all. Top that off with getting the kids back to school and there you have it… Yet, here I am still thinking about what I will make first!

With a simple Facebook post after Christmas, I was excited to find there are many excited individuals in my circle of friends willing to share some of their favorite recipes as well as links on where to find more recipes. Just today I typed BEST INSTANT POT RECIPES and the results a mere … 2,400,000 results (0.35 seconds).

Considering I am a visual person, I chose a DELISH article51 Things You Can Cook In An Instant Pot, Spoiler: basically everything. It offers up a gallery for viewing with a Salted Caramel Cheesecake at the beginning; a Chocolate Lava Cake (slide 9); and a Veggie – Brussel Sprouts in 3 minutes flat, (slide 13). And that’s not even half way through!

Needless to say, I have my work cut out for me. After typing this review and starting a recipe search, I think I’ve just opened Pandora’s Box. It seems the possibilities are endless! One thing I am sure of … I just found a new best friend to keep me company in the kitchen which will free up a hand for a glass of wine.
